Weighscales and servo motor!

Hi, I want to weigh a product as it comes off a machine with a scales and then use the scales to feed information to a servo motor. The servo motor will turn a shaft which will correct the weight to nearer the set point. How would I go about this in the simplest way possible? Cheers,

use weight as input to a function that sets target position of the servo. how fancy the function is depend on how much control you want over entire process. i worked on project where product is packed into bags and the idea is to simply gradually reduce flow of material as the bag gets close to setpoint.
