We're a few updates behind on most of our melsec software.... if I update the most recent, will it include all the in between updates that we have missed?

You should get download the iQ-Work 2. That is more recent.

 During installation it will ask which versions you would like to update

iQ-Works2 will not work unless you have a new license key (for iQ-Works2). If you don't have a new key, then you'll need iQ-Works.

In any case you will get all in-between updates. The software's that Mitsu release are generally not service packs. They are full software packages, so you can basically download and install iQ-Works 1.74 without any other installations prior to it.
