Look up the 'mrmattandmrchay' youtube channel, they have produced a number of videos relating to an older relay operated lift.

That will probably answer all your questions.

In my opinion the control system for an elevator spanning 50 floors is a task for an OEM of elevators and does not qualify as a DIY project.
